Soup for Holidays

Mushroom Velvet Cream Soup - boy if that doesn't sound rich... This is the perfect holiday soup. If you love mushrooms (like we do) you will love this soup. My parents serve it often during the holidays. It makes the perfect first course. I think we even served it at a couples baby shower one year.

So, this is my soup - well, it's not my soup and I don't actually even know where it came from. I have a copy made from the cookbook and I wish I could give credit where credit is due. But I can't. Anyways, my blog friend, Stefani, is collecting soups from across blogland over at her digs, Blue Yonder. Check out her season of soups.


Mushroom Velvet Cream Soup

1/2 pound fresh mushrooms, sliced (experiment with different mushrooms - get crazy!)
1 cup chopped fresh parsley
1 medium onion, chopped
1/4 cup butter, melted
1 T flour
1 3/4 cups beef broth
1 cup sour cream
Parsley sprigs for garnish

Saute mushrooms, parsley and onion in butter, stirring until tender. Stir in flour. Remove from heat and blend in broth. Bring to a boil, stirring constantly. Blend mixture in portions in a blender or food processor with sour cream until smooth. Reheat gently. Garnish with parsley sprigs.

Prep time: 30 min.
Cooking time: 30 min.
Serves: 4

And because this recipe makes me think of the holidays that are fast approaching, I just thought I would throw in a couple shots from the day after Thanksgiving last year where we attempted to go and cut our Christmas trees at Snowy Peak. Well, apparently they were just starting to get their first snow that day and it was cold!! Our crew and the cousins didn't last very long. So, we opted for cookies and cocoa in the back of our car. But soup would have been really good on a day like this...

Man that was a lot of cookies!! We were prepared in case we got caught in a storm. Check out all those red noses!

Oh man! I would never have thought to try a mushroom soup, but DANG if that doesn't look divine! Thanks for sharing it! It's added to the list, and I cannot wait to give it a go!
